Mt. Joy, a fast-casual chicken sandwich restaurant focused on sustainable farming practices, is set to open its second location in Seattle on Nov. 15. Founded by tech entrepreneur Robbie Cape and restaurateur Ethan Stowell, the company initially started with a food truck in Capitol Hill before opening its first brick-and-mortar restaurant in the same neighborhood last December. Mt. Joy raised $1.5 million in funding from various investors to support its mission of disrupting the agriculture and food industries with locally sourced ingredients and regenerative agriculture practices.

Mt. Joy’s commitment to sustainable farming practices includes sourcing over 90% of its food from states in the Pacific Northwest region such as Washington, Oregon, California, and Idaho. The restaurant’s focus on regenerative agriculture is aimed at improving the organic makeup of soil and reducing carbon emissions, aligning with Amazon’s Climate Pledge to reduce CO2 emissions. Amazon’s head of asset management for North America, Kristen Rincon, praised Mt. Joy’s practices and their potential impact in combating climate change.

The flagship item at Mt. Joy is its fried chicken sandwich, but the restaurant also offers other menu items such as tenders, wings, fries, a portobello sandwich, a vegan tofu wrap, and shakes. The company plans to continue expanding into more markets across the Pacific Northwest in the coming years, with a vision for growth beyond 2025. CEO Robbie Cape, who previously worked at Microsoft and co-founded the family organizing app Cozi, brings his experience in technology and business to drive the success of Mt. Joy and its sustainable farming practices.

In celebration of the opening of its new location in Seattle, Mt. Joy will be hosting an opening celebration on Nov. 15 from 10:30 a.m. to 3 p.m. at The Deck in the South Lake Union neighborhood. The Deck, an Amazon-owned food court, will be the home of Mt. Joy’s second location, allowing customers to enjoy the restaurant’s offerings in a convenient and accessible setting. With a focus on sustainability, locally sourced ingredients, and a commitment to regenerative agriculture, Mt. Joy aims to make a positive impact on the food industry while providing delicious and satisfying meals to its customers.

Overall, Mt. Joy’s expansion into Seattle reflects its dedication to promoting sustainable farming practices and locally sourced ingredients in the fast-casual dining industry. By partnering with The Deck in South Lake Union, the restaurant is able to reach a wider audience and continue its mission of disrupting the agriculture and food industries. With plans for further expansion in the Pacific Northwest region and a commitment to reducing carbon emissions, Mt. Joy is poised to make a significant impact on the way food is produced and consumed in the future.
