‘Chopped’ finalist shares top tips for grilling steak and cooking fish on Japanese grill in just 2 minutes

Many Americans are gearing up for the grilling season, starting with National Barbecue Day on May 16. While grilling may seem daunting for those with limited cooking experience, with a few tips and recipes, it can become a simple and enjoyable activity. Chef Sean Olnowich recommends using charcoal over gas for a higher heat cooking point and charred flavor. Fattier cuts of meat like rib eye and skirt steaks are ideal for grilling, as they have more flavor. When grilling a steak, Olnowich suggests cooking it to an internal temperature of 120 degrees Fahrenheit for rare to medium-rare doneness.

When it comes to grilling fish, Olnowich recommends using fattier marine life like tuna, salmon, and swordfish for direct contact with the grill. Flaky fish should be cooked using the tinfoil method to prevent it from falling apart. Konro grills are also recommended for grilling fish, as they burn clean and produce unmatched flavor. For seasonings, Olnowich prefers a simple combination of salt, pepper, and olive oil, but also recommends a pastrami spice rub for added flavor without smokiness.

Marinating meats can add flavor, acidity, and texture, but Olnowich warns against using heavy marinades that can take away from the quality of the beef being grilled. For a well-pronounced charcoal flavor, Olnowich advises using mesquite or hickory charcoal, or cherry or pecan wood pellets to infuse flavor into the food. When seasoning your grill, Olnowich recommends using bacon fat or canola oil to maintain a high smoke point and assist in the perfect grill.

Grilling is a popular activity during the warmer months, and with the right tips and recipes, it can be a rewarding experience for both novice and experienced grillers. Choosing the right type of grill, meat, seasonings, and cooking methods can make a significant difference in the flavor and texture of the final dish.
