New Year’s food and drink trends: cocoa, flowers, and a special type of beer

In 2025, experts predict several food and drink trends that are expected to take off. Some of the trends include a greater emphasis on fusion cuisine, the use of flowers and mushrooms in meals, the rise in popularity of cocoa-infused beverages and culinary innovations, and an increased demand for Guinness beer among younger drinkers. Consumers are looking for more gourmet and intensive hot cocoa varieties, as well as sweet and savory infusions and plant-based versions of the beloved hot beverage. Restaurants are responding to the trend by moving away from artificial chocolate flavors and using fresh cocoa to enhance their dishes, including dessert menus.

Flowers are becoming a popular ingredient on beverage menus, in salads, and other food items. Edible flowers have gained popularity over the past few years and are being used in creative ways to add depth, flavor, and color to dishes. Mixologists are using flowers to add brilliant colors to their cocktails, while chefs are incorporating flowers into salads to enhance flavors beyond traditional greens. The Gen-Z population, in particular, favors flowers like hibiscus, lavender, and cherry blossoms in both hot and cold beverages, according to the NEXT Flavor Report released by Rubix Food.

Guinness beer is experiencing a surge in demand, especially among younger drinkers. The beer has been successful in targeting Gen Z consumers through marketing strategies like the “Split The G” challenge, where participants drink so the foam lines up with the letter “G” in the Guinness logo on the glass. This challenge gained popularity on social media platforms and has helped the brand appeal to a younger demographic. Diageo, the parent company of Guinness, has successfully connected with younger generations while maintaining the brand’s rich history.

Overall, the food and beverage trends predicted for 2025 reflect a growing interest in unique and innovative flavors and experiences. Consumers are increasingly looking for new and exciting ways to enjoy their favorite foods and drinks, from gourmet hot cocoa varieties to dishes featuring edible flowers. The rise in demand for Guinness among younger drinkers also highlights the importance of appealing to new generations while staying true to the brand’s heritage. As the year progresses, it will be interesting to see how these trends continue to evolve and shape the culinary landscape.
