Renowned Gramercy Tavern chef Michael Anthony has been appointed as the culinary consultant for the planned restaurant at the Waldorf Astoria. This extended shutdown is considered embarrassing for Hilton, especially as they have expanded the Waldorf Astoria brand worldwide while the original New York location remains closed.

The Waldorf Astoria is expected to reopen with only 375 rooms, significantly less than its original number of 1,400, to accommodate luxury condos. Although Anthony stated that he will maintain his commitment to Gramercy Tavern, his role at the Waldorf Astoria appears to be mainly to provide local credibility to the hotel and its upcoming restaurant, which has yet to be named.
